Pork Stir Fry wiht Chow Mein Noodles

I served this dinner earlier in the week but left it to post today knowing that Thanksgiving Day would throw my schedule off a bit. Hope you enjoy!

In cleaning out the freezer I found 4 boneless pork chops that needed to be used as soon as possible. The other night was one of our super busy nights so I needed something that could be put together in less than 20 minutes so we could be out the door in 30 minutes. This is one of those meals that is perfect for our To-Go meals.

For those that don’t know I have to feed my family in the car several nights a week due to classes and lessons being stacked together or in the case of my daughter’s dance class, about an hour away. Rather than feed them from a drive-through I have several divided dishes that we use to take meals in the car with us so they can be eaten in between classes or after rehearsals. Insulated containers and bags can really help keep hot food hot and cold food cold.

Verdict:

This was a hit! My kids love Asian flavored stir-fries and this was delicious. It had a bit of heat to it from the crushed red pepper flakes that you can eliminate or add more depending on your tolerance for heat.

Ingredients:

  • 2 (6 oz) packages of Chow Mein noodles (Not spaghetti! These are usually found in the ethnic food section of your grocery store)
  • 3/4 cup soy sauce
  • 1/4 cup + 2 TBSP ketchup
  • 1/4 cup + 2 TBSP Worcestershire Sauce
  • 6 tsp sugar
  • Crushed Red Pepper Flakes, to taste
  • Oil
  • 1 – 1 1/2 lbs. Boneless Pork Chops, cut into thin strips
  • 1 large head of broccoli, cut into florets
  • 1 bag of coleslaw mix
  • 4 tsp garlic, minced

Directions:

  1. Mix soy sauce, ketchup, Worcestershire sauce, sugar and red pepper flakes in a small bowl. Set aside.
  2. Begin to boil water for chow mein noodles.
  3. Heat a bit of oil in a wok or large skillet. Cook pork thoroughly.
  4. Remove pork from pan and add broccoli. Add a bit more oil to pan if needed. Cook pork for 4-5 minutes until it turns bright green and begins to soften just a bit.
  5. Add garlic and coleslaw mix to the pan. Fry for 2-4 minutes until the coleslaw mix begins to wilt.  Water for noodles should be boiling by this point add noodles to boiling water. Cook according to package.
  6. Add pork and noodles to the pan. Pour sauce over the top and toss to combine.
  7. Serve with extra soy sauce and red pepper on the side if desired.
